Mule Deer Taco Mac and Cheese Bake
Comfort food? Ahh yeahhh, gimme that comfort food. It's my favorite "category" if it should ever be considered one on its own. While usually I would post a harvest picture of the animal being used in the recipe, I don't have one because this mule deer was tagged by someone on one of my dad's elk hunts. Picture or not, this was dang delicious. And once again, family providing for family.
Ingredients
1# ground meat
2 TBSP minced garlic (or 2 handfuls because garlic is delish!)
1/2 medium onion, chopped
2 TBSP taco seasoning
15oz canned black beans
28oz canned crushed tomatoes
12oz elbow macaroni
3 cup shredded cheese
Directions
Preheat oven to 350
Chop onion then caramelize in cast iron pan before browning the meat
Brown meat with onion, seasonings, and garlic
Cook noodles, drain, and layer in bottom of casserole dish
Add drained can of black beans and crushed tomato to meat mix. Simmer for 3 minutes
Mix meat and cheese with noodles in casserole dish
Bake for 20-30 minutes
Garnish with sour cream, guacamole, or any other taco fixings you may enjoy
