Chocolate Protein Mug Cake

School has started and several different hunting seasons are open depending on your location within the US. If you're out and about over a weekend and find yourself craving something sweet but don’t have a lot of supplies on hand, I have the perfect single serve recipe for you!  This recipe can be prepped ahead of time and will pack easily for hunting camp.

Below you will find a list of all of the ingredients you will need to make the Chocolate (Protein) Mug Cake

Ingredients:

Mug Cake

1 serving protein of choice (optional)

1 tablespoon all purpose flour

1 to 2 tablespoons of coconut flour

1 tablespoon flax

1 to 2 tablespoons of coco powder

1 egg

¼ to ½  cup of milk of choice

½ tablespoon sugar

1 teaspoon vanilla extract

½ teaspoon baking powder

Optional:

Chocolate chips

Nuts

Berries

Whipped Cream or Heavy Cream

Oil of choice- no more than 1 tablespoon

Instructions

1.       Mix all of your dry ingredients together ( protein powder, flour, coconut flour, flax, baking powder, sugar.

2.       Add your egg to the dry mix. Then slowly while whisking the ingredients together add your milk of choice slowly to ensure you reach your desired consistency.

3.       Allow to stand for one minute, while preparing mug cup. Coat the interior of the mug cup with a little oil. **Please note the size of the mug cup will be determined by the overall volume of flour, especially coconut flour, that you add to your mixture. Choose your mug size to ensure you have plenty of room for expansion.

4.       Slowly add the mixture to the mug. **This is where you can play with placement of nuts, chocolate chips, berries, etc. For this cake I added half the mixture and then sprinkled in a few chocolate chips, then covered with the remaining portion of the cake mixture.

5.       Place Mug Cake in microwave with cup underneath to catch possible spill over.

6.       Microwave until cooked. The time will depend on the wattage of your microwave, as well as, the volume of your mug cake. This cake took approximately 2 minutes. **Check to the top of the cake if it is still wet, add back in for another 30 seconds and continue to check until cooked

7.       Take out of microwave. Flip over on to desired dish. Tap bottom of cup to release

8.       Your cake is finished! Garnish as you desire.

9.        And last but not least enjoy!
